Falling into Slowness

Self-care continues with puppy walks, reading, yoga, running, and lifting. While that might sound like a lot, it means peace and calm in my mind and body for me. I found that I am embracing a slower pace after a couple running injuries and digestive issues earlier this month. For a type A, it is shocking to not over schedule and over commit. Maybe it helped to read Sarah Knight’s book, The Life Changing Magic of Not Giving a F*ck.

My favorite chocolate bars, Skout Backcounty Peruvian Chocolate Bars, were discontinued. With my many allergies, I struggle to find bars that work with simple and real ingredients. My current plan it to stock pile their bars, hope that more people complain, and the company returns to their original bars.

We Love You and So Could You podcast featured Gina, founder of Renaissance Person, inspired me to try new things. Since Renaissance Person, it a Brooklyn thing, I looked to my local area and booked a date night of Axe Throwing.

I struggled with some anxiety last week. After following the directions from my old boss, now my boss’s boss, I was being blamed for wasting time. The old me would have apologized to save the peace. The new me looked this boss straight in the eyes and said, “This is not my fault. I followed your directions. I am not to blame for this.” My old boss doesn’t like conflict and cannot handle opposing opinions.

Despite the fact that I was kind and direct, I was still filled with anxiety. Thanks Ladies’ episode #4, How to Survive Anxiety with Dani Bondurant, helped me calm down and relax. I was able to identify the point in my life where my people pleasing, perfectionist ways started and has caused me anxiety and stress ever since. This might explain the interest in the self-help books.

What’s Cooking

Breakfast pizza the lower carb and tasty way.

  • Pre-made cauliflower crust. It just needs to be defrosted for this recipe so let it sit out for 30 minutes.
  • Fry 4 to 5 slices of bacon but only part of the way. Chop it up and bacon becomes this pizza’s final topping.
  • Mango salsa or any kind you want as the sauce. Spread the salsa over the pizza crust.
  • Layer slices of mozzarella cheese.
  • A handful or two of frozen hash browns. You want the frozen sticks of potato so that you can fry them in the remaining bacon fat and some extra oil. Once the hash browns start to turn brown, they are ready to go on the pizza.
  • Crack open a couple eggs and place them on top of the hash browns.
  • Now sprinkle that bacon on top.
  • Cook at 450 degrees until the eggs are cooked to your liking. Maybe between 15 and 25 minutes.

As a review, here are the layers of the breakfast pizza.

  1. Bottom: Cauliflower crust
  2. Salsa
  3. Mozzarella cheese
  4. Hash browns
  5. Eggs
  6. Top: Bacon

What am I reading?

Before I dive in to the beautiful fall weather that makes me want to cozy up on the couch under a blanket and read cozy mysteries, I finished The Life-Changing Magic of Not Giving a F*ck: How to Stop Spending Time You Don’t Have with People You Don’t Like Doing Things You Don’t Want to Do by Sarah Knight. If Marie Kondo could get me to tidy my physical things once and for all, Sarah certainly filled my mind with great ideas on how to spend time, money, and effort on things that I enjoy and to say no to those things that don’t spark much joy for me.

One example, baby showers. I can officially say I have a personal policy that I do not attend those events except if the shower is for a cousin. I am happy for moms, but I just don’t want to give up 3+ hours on the weekend to look at diapers and baby stuff and having to wear a real bra (#strugglesarereal). Recently I was invited to a baby shower for my husband’s friend’s wife. We purchased some great things off their registry, I declined, and they still got amazing gifts. I would rather take their gifts to visit them and some take out dinner for 3 hours rather than attend a baby shower.

I do plan on reading the rest of the No F*cks series by Sarah Knight that include You Do You: How to Be Who You Are and Use What You’ve Got to Get What You Want and Calm the F*ck Down: How to Control What You Can and Accept What You Can’t So You Can Stop Freaking Out and Get On With Your Life once they become available at the library.

Moving on to the cozy mysteries of fall. I found Carolynn Haines’ A Sarah Booth Delaney Mystery series enjoyable last year. I started mid series and bounced around. This year I am starting with the first in the series, Them Bones. The series is based upon Sarah Booth Delaney, her dear friend, and everything that could go bad as investigations appear in the Mississippi Delta.

House Hack

So you baked something and it tastes great, but it left a baked on/caked on mess. Don’t toss the pan or dish! Don’t spend time scrubbing without success! Simply get the pan or dish wet, sprinkle on baking soda, and wait. The baking soda should be thick but wet. Depending on how bad the burnt on mess it, you could let it sit overnight. When you are ready to wash the dish, just wipe the pan down. The baking soda works miracles! Then wash the dish like usual.
