Meal Planning from the Kitchen… Challenge Accepted

Every couple of months or so I challenge myself to meal plan using as much stuff that we already have in the cabinets and freezer as possible. This week I am making the plans. Our breakfasts are very consistent, so these meals are for lunch and dinner.

Rules:

  • Dietary choices/allergy restrictions are not compromised. (My husband recently declared he isn’t eating carbs.)
  • Can purchase additional food to enhance what is already in the kitchen.
  • Prepare the family.

Text to my husband:

Meal #1 (Grill) Grilled Teriyaki Beef Tip Salad:

Have – frozen teriyaki beef tips, olive oil, vinegar, and edamame.

Purchase – salad mix, broccoli slaw, and avocado

Meal #2 (Crock Pot) Slow Cooker Chicken and Broccoli:

Have – alfredo or bbq sauce

Purchase – chicken breasts and frozen broccoli

Meal #3 (Stove Top) Spaghetti:

Have – grain free pea spaghetti, avocado oil, and spices

Meal #4 (Oven) Honey Mustard Baked Chicken:

Have – marinade ingredients

Purchase – chicken thighs and baked sweet potatoes

Meal #5 (Microwave/Toaster) Keto/Grain Free Tuna Fish Sandwich:

Have – canned tuna and ingredients for a grain free/keto bun

Purchase – avocado

Meal #6 (Oven) Herb Crusted Pork Loin:

Have – pork loin, olive oil, and herbs

Purchase – sweet potatoes

  1. i make a “beef stroganoff” by getting the beef tips in gravy that you can microwave to heat up. egg noodles and some sour cream. a bit of pepper and salt. done!!

    i also stir fry beef, pork, chicken or shrimp (raw or already cooked) with some mushrooms, onions, garlic and other small pieces of vegies. i like to add them to pasta like spaghetti.

    summer is a time for salads. so will add cooked shrimp.

    also will grill any time of the year fish mostly, chicken or a pork loin or trip tip.

    i’m into quick meals so anything i can cook quickly or prepare quickly. lol
